This is the inspiration of Ethos – a stellar new restaurant based in the heart of Rosebank, Johannesburg, which boasts a philosophy of Mediterranean cuisine. Food has always been more to the Mediterranean people than just sustenance. Rather, it is the spirit of what defines their romance and is the vehicle through which they express their love for the world around them.

OUR Kitchen:
Chef leigh Knipe
Johannesburg native Leigh-Ann grew up in a close-knit, family-oriented home with dreams of becoming a lawyer. However, during her Matric year, she realized that law wasn't her true passion. Instead, she decided to take a leap of faith and pursue Culinary Arts. “Looking back, it was the best decision. The adrenaline of service, the unpredictability of each day, and the constant learning in this industry are what thrill a chef,” she reflects.
After graduating from CTIA in 2015, Leigh-Ann had the privilege of working at Chef Bertus Basson’s renowned restaurant, Overture, where she laid the foundation for the type of chef she aspired to become. This experience clarified her career ambitions. Returning to Jo’burg, she secured a Commis position at Restaurant Mosaic under Chef Chantel, steadily working her way up to Chef Tournant and later Expediter.
After stepping away from the restaurant industry for a few years, Leigh-Ann worked as a Private Chef for several families and ran a small catering business. In 2022, she joined the opening team at Old Oak Restaurant as Sous Chef.
Now, as Head Chef at Ethos, Leigh-Ann is eager to explore the diversity of Mediterranean cuisine and bring out the best in every member of the Ethos team.

CREATIVE DIRECTOR GIORGIO TATSAKIS
Pre-Covid, Giorgio and his father and founder, Chris Tatsakis, travelled abroad to countries including Greece, Italy, Dubai and the United Kingdom for inspiration to incorporate into Ethos. Giorgio kept the new spaces’ interiors synonymous with the brand, however added a few more design trends. This includes his favourite feature; the new ceiling baffles which consist of a special material imported from France suspended from the ceiling, as well as rich-in-texture Arabescato marble from Italy.
Diners can expect to indulge in some delicious dishes in a luxurious and dramatic setting, which includes sweeping arches, grand columns, impressive Italian marble and a soothing neutral colour palette with brass accents.
