This is the inspiration of Ethos – a stellar new restaurant based in the heart of Rosebank, Johannesburg, which boasts a philosophy of Mediterranean cuisine. Food has always been more to the Mediterranean people than just sustenance. Rather, it is the spirit of what defines their romance and is the vehicle through which they express their love for the world around them.

OUR Kitchen:
Consulting Chef Moses Moloi

Born and raised in Botshabelo, a small township outside Bloemfontein, Moses studied his culinary Diploma at the Olive Chef School.

Fuelled by an insatiable passion for the culinary arts and an unquenchable thirst for knowledge, Chef Moses has honed his craft at both local and international culinary establishments. With each experience, he sharpened his skills, forging an impressive culinary repertoire.

Since 2021, Chef Moses has emerged as a beloved figure in South African’s culinary landscape, earning acclaim as one of the world’s foremost chefs. His talents have earned him accolades and recognition, both domestically and abroad. Presently, he stands nominated for The Best Chef Awards, holding a coveted position within the world’s top 100 culinary talents. In November 2023, Chef Moses is set to receive his official world ranking, a momentous occasion to be celebrated from the kitchens of Mexico.

CREATIVE DIRECTOR GIORGIO TATSAKIS

Pre-Covid, Giorgio and his father and founder, Chris Tatsakis, travelled abroad to countries including Greece, Italy, Dubai and the United Kingdom for inspiration to incorporate into Ethos. Giorgio kept the new spaces’ interiors synonymous with the brand, however added a few more design trends. This includes his favourite feature; the new ceiling baffles which consist of a special material imported from France suspended from the ceiling, as well as rich-in-texture Arabescato marble from Italy.

Diners can expect to indulge in some delicious dishes in a luxurious and dramatic setting, which includes sweeping arches, grand columns, impressive Italian marble and a soothing neutral colour palette with brass accents.
